After many trials and tribulations, leaky caps and clumsy sizes I have found perfection! This little guy seems to fly under the radar in most kitchens. They are in season right now, but are available all year round. Extremely low in calorie and great for fighting belly bloat, radishes pack a nutritional punch. They are rich in folate, fiber, riboflavin, and potassium, as well as good amounts of copper, vitamin B6, magnesium, manganese, and calcium. It's probably no surprise that radishes also contain fiber, aka indigestible carbohydrates. Slice them thin and drizzle with olive oil and a sprinkle of sea salt for a light, tasty treat. Or roast them whole in the oven. Yes you can!! They are surprisingly creamy and sweet.
